Μελιτζάνες γεμιστές
Μια λαχταριστή συνταγή, τώρα που είναι η εποχή τους.
▪️ Υλικά
2 μελιτζάνες
400 γρ ψιλοκομμένη ντομάτα
1 σκελίδα σκόρδο
Μια χούφτα ελιές χωρίς κουκούτσι
150 γραμμάρια μοτσαρέλα
Ρίγανη και βασιλικός
Εξτρα παρθένο ελαιόλαδο
Αλατοπίπερο
▪️ Εκτέλεση
Κόβουμε τις μελιτζάνες στη μέση, τις αλατίζουμε, ρίχνουμε λίγο λάδι και τις ψήνουμε για μισή ώρα στους 180 βαθμούς. Ετοιμάζουμε την ψιλοκομμένη ντομάτα, προσθέτουμε λάδι, μια σκελίδα σκόρδο, αλάτι και πιπέρι. Προσθέτουμε την ντομάτα πάνω από τις μελιτζάνες, τη μοτσαρέλα, τις ελιές και ψήνουμε άλλα 10 λεπτά. Σερβίρουμε με λίγη ρίγανη και λίγα φύλλα βασιλικού.
